Hot Fudge Filled Lava Cookies.
Oh my!
Hi everyone!
It’s me, Mary Beth, from Cupcakes and Crinoline
back today with another recipe for you.
If you’ve ever eaten a lava cake this is similar ~
except smaller so you don’t feel as guilty when
you eat one.
I have a thing for sweets….if you know me,
you know that and these are a new favorite
of mine and my family. As a matter of fact when
I was editing these pictures my boys all were asking
for them again – actually, they were complaining that
when I make something for the blog I never make
it again….nag, nag, nag. I think I will make
these again, though, because they were so easy
and so tasty!
These are a basic cookie recipe ~
it’s my favorite chocolate chip recipe cookie minus
the chocolate chips BUT you can easily add chips
if you want more of a chocolate punch.
Ingredients:
1/2 cup salted butter, softened (not melted)
1/2 cup packed light brown sugar
1/2 cup granulated sugar
1 large egg
1/2 teaspoon vanilla extract
1 3/4 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
Purchased small jar of hot fudge topping
Pre-heat oven to 350 degrees.
Coat the inside pockets of a muffin tin with butter
(you can also use non-stick cooking spray if you prefer).
Cream together butter, brown sugar, and the
granulated sugar until fluffy. I use my mixer for
this but if you want to do it by hand you certainly
can (I don’t have enough muscle power for that!).
Add in egg and vanilla and mix until just blended.
In a separate bowl combine flour, salt and
baking soda and slowly add to the butter mixture
about 1/2 cup at a time.
Using your hands pull out about 1 heaping
tablespoon of cookie mixture at a time,
roll into a ball…..
…and then flatten in the muffin tin.
Do this for all 12 muffin wells.
Spoon 1 teaspoon of hot fudge topping onto
the center of each cookie.
Once again, roll 1 heaping tablespoon of cookie
dough into a ball, flatten with your fingers and
place on top of the hot fudge.
Bake for approximately 15 minutes, until golden brown.
Remove from oven and cool on a cooling rack
for 15 minutes. Run a knife around the edge of
the cookie to release it from the tin and serve warm…
or, if the cookies are fully cooled heat in the
microwave for 15 seconds just to get everything
all nice and warm again.
