French Toast is a weekend delicacy at The Everyday Home. 

I know that French Toast is in itself, not that hard to make.  It’s a beginners home cook’s recipe at most.  Bread, eggs, cream, spices, hot skillet.  Done.   But, I love to get creative with French Toast.  And since it’s a favorite breakfast food of my babies, it’s perfect for weekends when they are staying here with us.  I was at the farmer’s market a few days ago and could not resist these fabulous blackberries that were just calling out my name.  I knew they would be perfect on top of this Pumpkin French Toast recipe…and boy was I right!

I don’t have many cooking secrets.  I have a few, and when I do I love to share them.   Cast Iron.  Yep.  Cast Iron.  I am slowly getting rid of all of my pots and pans, to include my Calphalon, and replacing them with old fashioned cast iron pieces.  I threw out my toxic no-stick stuff years ago.  I have several vintage pieces of cast iron, such as my grandmother’s square skillet.  I am adding more and more all the time.

My secret for perfect French Toast every time?  A hot iron skillet.  I love to use my Griddle pan so that I can fix several slices at once.  Trust me, when you have a super hungry 10, 6 and 4 year old looking at you with anticipation in their eyes,  you want to hurry and get this on the table.

Finally, I used canned pumpkin.  Oh don’t roll your eyes at me.  😀   If you want to spend half your day prepping and baking and pureeing real pumpkin – have at it.  I used the ordinary unsweetened canned variety.  Make sure you use puree and not pumpkin pie filling.

Oh and one more quick little secret for the maple syrup.  I add it almost every time I make homemade waffles, pancakes or French toast.  Add a few teaspoons of orange juice and if you have it on hand, grate some fresh orange peel into the syrup, too.  Then heat it slightly to meld the flavors and serve warm.  Trust me, you will thank me later.  🙂

A yummy Fall treat! Thick slices of bread with pumpkin and spices prepared on a hot griddle until toasty brown, served with real Maple Syrup infused with orange juice and orange zest. Perfect for breakfast, brunch or even dinner!

Ingredients
  1. 9-slices of bread, such as Texas Toast, French Bread or Challah
  2. 1/2 Cup unsweetened pumpkin puree
  3. 4 eggs
  4. 3/4 Cup heavy cream
  5. 1 teaspoon ground cinnamon
  6. 1/4 teaspoon each of nutmeg and ground ginger
  7. 1 teaspoon pure vanilla extract
  8. pinch of salt
  9. 2 teapoons packed brown sugar
  10. Butter for Griddle
  11. 1 Bottle Maple Syrup
  12. 3 teaspoons fresh orange juice
  13. 1 teaspoon orange zest
  14. (opt) Fresh Berries and Mint
Instructions
  1. In a medium sized mixing bowl, whisk eggs. Pour in cream and whisk with eggs until well blended. Add spices, pumpkin puree, vanilla, salt and brown sugar. Whisk to blend. Transfer egg/pumpkin mix to an oblong baking dish which will allow you to coat bread slices easier. Add two or more slices in egg mixture, and allow to soak well. *I like to turn slices over to make sure they are evenly coated on both sides.
  2. Heat a skillet or griddle pan on Medium High. Melt about 2-3 teaspoons of butter. Lay egg/pumpkin coated bread on griddle. Cook until slightly brown, turn to other side and repeat.
  3. Serve with warm syrup, fresh fruit, maple butter and mint.

      I wasn’t sure we would like it but it was fabulous. I would *possibly* leave out the brown sugar and use honey next time. 🙂
