Our house has Holiday Confusion Syndrome.
I have Santas stacked around pumpkins,
and fall leaves mingled on tables with faux snow.
I am putting away the remnants of the Fall decor
while trying to unload the Christmas bins.
I know, I know.
It would have been a lot easier to put away
all the Fall decor prior to getting out the
Christmas decor. But, well…

So, while I put away the bags of fresh cranberries
and an armload of pine boughs – a brainstorm hit.
I’ll make a Fall
Sticky Pudding Pumpkin Cake
It’s a curious thing, the life of a Blogger.
We’re always caught in between holidays.
A little ahead of most everyone else because we
have to work on projects, and take a gazillion
photos to edit, then pour out our hearts and thoughts
and words onto this page.
So – while I may be in the throes of decorating for
Christmas, I look outside and see all the gorgeous Fall
leaves on our property, and my heart swings back to
pumpkins and spice.
One of our favorite all time desserts is
Sticky Toffee Pudding, something
we always eat in England every time we visit, and I have
attempted to create here but have never seemed to
have any luck. :-/
When I came across this recipe for
Sticky Pudding Pumpkin Cake, I looked at
the ingredients and knew right away I had to try it.
And, boy am I glad I did.
It was amazing!
I created my own Brown Sugar-Bourbon Pecan topping.
*(Bourbon is optional – but why? LOL )

I used these cute *mini pans…
The recipe is so incredibly easy.
It takes a little longer to bake because of the
ingredients. I will also warn you.
This is a “pudding” style cake.
It’s not a dense texture – but much more soft and spongy.
I think once you bite into this moist and yummy cake –
you’re gonna agree – its
pumpkinliscous good.
Enjoy!!!!
- (1) Box Yellow Cake Mix
- (1) 12 oz. Can Evaporated Milk
- (3) Eggs
- (4) Tsp Pumpkin Pie Spice
- (1/2) tsp salt
- (1) Cup Sugar
- (1) 29oz Can Pure Pumpkin Puree, minus 1/2 cup
- (1) Cup Chopped Pecans
- (1) Stick Butter
- pinch of salt
- (1) Cup Brown Sugar
- 3 Tbs Bourbon (opt)
- In large mixing bowl, combine pumpkin, sugar, milk, eggs, spice and salt. Beat well. Pour in box of cake mix. Mix thoroughly. Pour into greased pans. Bake 350 degrees for 45-60 mins, depending on size/color of pan.
- Sauce: Melt butter, add brown sugar and bourbon. Stir well. Add pecans.
- Since all ovens vary, you need to also use the spring test, as well as, the clean knife test. If cakes do not feel tacky or springy to the touch they should be done. The doneness if the trickiest part.

I made the delicious sticky pudding cake last night for guests. I only had 14 oz of pumpkin so i cut the sugar in half. I dont think i cooked the glaze long enough because the sugar was still a bit gritty. Never the less, my guests devoured the cake and gave it rave reviiews. Thank you for a fabulous recipe!!!

That is awesome. I am so happy your guests loved it. Its a keeper of a recipe for sure. I am going to try a Gingerbread version with perhaps Apple Butter. I love to experiment. Thanks for coming back and giving this recipe a rave review.
