I bought a bag of slivered almonds. Not just any bag. A “Sam’s Club” Bag.
(now you know what kind of “bag” I am talking about.) 🙂
Enough slivered almonds to make about 100 Green Bean Casseroles. I have NO idea why. It’s one of the many reasons I stay out of Sam’s Club and Costco. I think I still have about 3 gallons of the 5-gallon tub of peanut butter that sounded like such a great bargain at the time. I froze most of the almonds, but decided to make one of my fave recipes…
Deli Style Chicken Salad.
Several years ago, a local deli opened and had the most amazing chicken salad. It was a standard deli style chicken salad, with dried fruits and nuts added in, but they had added one more ingredient, and while on paper, it did not sound that good…it was AMAZING!!!
The extra ingredient was Bleu Cheese.
This Chicken Salad was a combination of sweet berries and crunchy nuts and tart blue cheese with a creamy yogurt dressing. Divine!
So, I decided to combine one of my family’s chicken salad recipes and tweak it just a bit. Now – it’s one of our favorite lunchtime sandwiches. It kinda even justifies the 20 lb bag of slivered almonds.

Here’s the ingredients:

It’s so easy to assemble..
You just add all of the ingredients into a mixing bowl, minus the yogurt and mayo, oil, lemon juice, honey and salt and pepper.
In a small mixing bowl, combine the yogurt and mayo, oil, lemon juice honey and salt and pepper.
Give it a good whisk.
Add the Creamy Mix to the other ingredients…
Give it all a good stir. Add more salt and pepper to taste.
And that’s it.
I love to serve it on toasted Ciabatta Rolls…but it’s also great for a quick pick-me-up or after school snack.
If you’re trying to avoid a few calories, try it on vegetable slices such as cucumber or zucchini.
Here is the Recipe:
- 3 Cups Cooked Chicken
- 2/3 Cup Crumbled Bleu Cheese
- 1/2 Cup Dried Cranberries
- 1/2 Cup Slivered Almonds
- 1/4 Cup Red Onion, finely chopped
- 1 Green Onion, thinly sliced
- (1) 5.3oz cup Plain Greek Yogurt
- 1/2 Cup Light Mayo
- 2 tsp olive oil
- 1 tsp lemon juice
- 1 Tbs honey
- salt and pepper to taste
- Add all ingredients into a large mixing bowl, accept the yogurt and mayo, oil, juice and honey.
- In a separate bowl, combine the wet ingredients and whisk well. Add salt and pepper to taste.
- Add the creamy mixture to the other ingredients, stir well. Add more salt and pepper to taste.
- *opt: you can also add the zest of one half lemon if a more citrus taste is desired.

YUM one of my favorite chicken salads we call it Napa chicken salad here in Calif. I have not tried one with bleu cheese, I will do that next time I make it. We only use green onion in ours too, YOURS looks and sounds delicious, Thanks Barb!
