My grandkids love sushi.
No really – they do.
It’s one of the things they ask for when they are here
visiting with Grammy and Grandpa.
Okay, I admit it.
It’s not the raw fish and eel and seaweed
kind of sushi.
(although they actually do like California sushi)
Rather, it’s made with three of their favorite food groups.
Green Apples. Raisins. And, Peanut Butter.
Apple Raisin Sushi
Last week, I shared a post about little packets I make
for the boys lunch boxes which I call “Clean Face & Hands Lunchbox Kits.“
After Roo came home wearing half of his spaghetti and meatballs
on his face, I knew I needed something to help with his clean-up.
The Wet Ones Antibacterial Singles were perfect!
I have a feeling – they made need an extra Wet Ones
after eating this lunch.
Here’s all you need:
Slices of Bread: white or wheat
Raisins, chopped fine
Apples: peeled and julienned
Peanut Butter: smooth or crunchy
Caramel Sauce
Rolling Pin
Sharp Knife
Step One:
Lay a layer of chopped raisins on top of a bread slice.
Place a layer of waxed pr parchment paper on top.
Using your rolling pin, smash and roll the raisins
into the bread. You need a thin layer of bread/raisins.
Step Two:
Smear a layer of peanut butter over the bread.
Place some of the julienned apples in the center.
Drizzle with Caramel Sauce.
Step Four:
Roll.
It’s easier if you use the wax or parchment paper to assist in this step.
Then, wrap your “sushi” in plastic wrap and chill
in the fridge for about 30 minutes.
Using a sharp knife… cut in four even pieces.
For an extra special treat if you were serving this after school, you could
serve this with a homemade salted-caramel dipping sauce.
The best part is that this packs up easy in a lunch box, too.
So, there you go.
The next time your kids say they won’t eat sushi …
prove them wrong.
Just make sure you pull out a few Wet Ones Singles for clean-up.
