I am so happy to see the weekend.
I am also happy to have my sweet friend, Mary Beth from
sharing another fabulous recipe, this time its
Chai Spice Cupcakes
with Homemade Vanilla Bean Frosting.
Hi Everyone – it’s Mary Beth.
Cupcakes are my favorite dessert.
You get an orb of deliciousness in a package that’s small enough to not cause too much guilt.
I enjoy making classic cupcakes like chocolate (of course) but I also like to make the
unexpected cupcake ~ avocado cupcakes with avocado buttercream frosting ~
one of my family’s favorites.
I also like to make unique cupcakes like these Chai Spice Cupcakes.
The first bite will hit your taste buds with a smooth rich flavor but it does leave a
slightly spicy (not too spicy) after taste. The Vanilla Bean Frosting curbs that a
bit but you still know that you have been in the midst of cupcake awesomeness.
Chai Spice Cupcakes
~ 1/4 teaspoon ground ginger, cinnamon and cardamom (each)
~ 1/8 teaspoon pepper ~ 1/2 cup butter, softened
~ 1 cup sugar ~ 1 large egg
~ 1/2 teaspoon vanilla extract ~ 1 -1/2 cups flour
~ 1-1/2 teaspoons baking powder ~ 1/4 teaspoon salt
~ 2/3 cup milk
Preheat oven to 350 degrees. Line 12 muffin cups with paper liners or
lightly grease a muffin tin.
Combine ginger, cinnamon, cardamom and pepper and set aside.
In a mixing bowl combine butter and sugar and cream until light and fluffy.
Beat in egg and vanilla.
Combine flour, baking powder, salt and spice mixture.
Alternate adding your dry ingredients (above) and milk with the butter
and sugar mixture beating well after each addition.
Fill muffin cups two-thirds full and bake for 26 to 28 minutes.
Cool for 10 minutes in pan and then remove and cool on wire racks
completely before frosting.
Yields: 12
~ Vanilla Bean Frosting ~
~ 2 sticks unsalted butter softened to room temperature and cut into small pieces
~ 1-3/4 cups confectioners’ sugar, sifted
pinch of salt
1 vanilla bean, scraped
1/2 teaspoon vanilla extract
2 tablespoons milk
Using an electric mixer beat butter until light and creamy.
Slowly add sugar beating to combine.
Add vanilla bean seeds and vanilla extract and once again beat to combine.
Slowly add milk and continue beating on medium-low speed until smooth.
