I baked today.
Well, my version of “baking.”
The kind where there are very few steps and no measuring
…the baking time is short, and the clean up is easy.
I hear what you’re saying out there.
“That type of baking doesn’t exist.“
Au contraire, my everyday non believers.
These cute little Bunny and Easter Cross Crackers took
me less than an hour to prepare and bake three batches.
And there were only 3 steps.
Yes, Virgina…easy baking recipes DO exist.

Homemade Parmesan-Rosemary Crackers

Ok, here’s a little secret.
I attended Le Cordon Bleu in Brussels and France.
For about 3 years I delved into as many cooking classes
as I could. But pastry – hmmmm.
It wasn’t my strong suit. I do wish I had mastered the art of
the French croissant, though. So, I have learned the art
of “Easy and Shortcuts” when it comes to baking.
Take a pre-made pie crust, for example.
Would you have guessed you could make yummy crackers
from it? Oh, yes you can!!!
Here’s the simple way I made them.
I started by rolling out a thawed pre-made pie crust.
I then separated two eggs and reserved the whites in a bowl
where I added one package of Buttermilk Ranch Seasoning Mix.
Finally, I added 2 Tablespoons extra-fine chopped rosemary from
my garden. You could also use dill or parsley, but I love
the fresh taste it adds. Mix well.
Brush the pie crust generously with the Ranch mixture.
Next, sprinkle the crust with grated parmesan.
It kinda looks like the base of a yummy pizza, huh?
Then, you cut out your crackers.
I used a cute bunny shape and a Cross.
Lay the cut outs on a baking sheet…
You can place them pretty close together, because unlike cookies
they won’t spread out but will actually shrink.
Bake in a 400 degree oven for about 5-6 minutes, or until crispy and brown.
I made a triple batch of these for Easter. (three pie crusts)
I will be serving some with a Tuscan White Bean Dip,
and a few I will use as “croutons” on salads.
I love how they look in this simple salad served in my ruffled
pink bowls on a lettuce leaf charger.
The simple salad is dressed with one of my fave homemade dressings…

I also made my Easter napkins today, and added cute homemade
Bird Nest Napkin Rings.
This simple “5-Minute” Project is so easy.
This is on the schedule for next week, also.
{Next week will be a busy one in preparation for Easter}
Although I adore the Bunny-shaped Crackers, I love the
Easter Cross Crackers.
The Hubbs came in while I was baking these, and he nibbled
on a few. He couldn’t believe it was pie crust.
Okay, he may have nibbled on more than a few. I may have to make
three new batches before Easter gets here. 🙂
They’re light and crispy at the same time.
They have the zest of the ranch and the saltiness of the cheese.
I think they would be fabulous with hummus or any kind of dip.
The best part, you can cut them out in any shape.
Think how much fun you can have making different shapes of crackers.
You could also vary the flavor…think spicy Mexican or Zesty Greek.
