With the Summer months quickly approaching, I can already taste those vine-ripened, juicy red tomatoes. Succulent, crispy green peppers… and because I live on the coast…I can even smell the freshly caught shrimp hot from the boiling pot where they have been simmering in Cajun Shrimp Boil.

I thought I would re-post one of my favorite Summertime recipes for this week’s Tasty Tuesday!
This recipe is so incredibly easy, I can whip up a batch in minutes. I also love that it doubles as a quick summertime marina for pasta when simmered on low heat for about an hour.

One of my favorite go-to combinations for
Summertime lunches is
Shrimp Salad with
Tarragon Cream Sauce
and
Gazpacho Shooters
Throw in some mini Caramel Macchiato
Banana Pudding…and you have your guests
begging for your “gourmet” recipes.
Here’s how I “cooked” the soup…

The best part is that even if you don’t have access
to vine-riped orbs of red delicious tomatoes –
– you can substitute canned tomatoes.

That way everything is already nice
and chilled, and ready to serve.
