I am so excited to be in the kitchen today.
I am back to a #healthyeating plan and you’ll be seeing a lot
more of these kinds of dishes.
Especially this Summer – with all the fresh fruits and veggies in season.
Today, I am sharing my recipe for
Strawberry-Cantaloupe Salsa
Here in Eastern NC, we are just coming into Strawberry picking season.
I can’t wait to take the Grandloves out into the berry patch.
Plus, my strawberry jams are almost gone, so it’s time to
make several more batches.
Below are all of the basic ingredients you will need for this dish.
Chopping and assembly won’t take more than about 15 mins.
Here’s what you will need:
About 1 -1/2 cups finely chopped, ripened Strawberries
Approx 1 Cup finely chopped cantaloupe
1/2 medium Purple Onion, finely chopped
1 medium Jalapeño, de-seeded and finely chopped (opt)
Generous handful of fresh Cilantro, chopped
Zest of one Lime
Fresh juice from one Lime
2-3 Tbs of Organic Honey
pinch of Salt
splash of Balsamic Vinegar (opt)
You can chop the fruits and veggies as fine as you like… think “salsa size.”
I tried to keep the sizes all the same, except I did go smaller on the jalapeño.
Place all of the chopped ingredients into a mixing bowl.
Add the salt, honey, lime zest and lime juice.
Give it a good mix to help coat all the pieces with the seasonings.
Because I love the taste of strawberries and balsamic vinegar,
I decided to also add just a small splash.
It was perfect!
After about 30 mins of chillin’ in the fridge,
it was amazing!
I made a smaller batch sans jalapeño for the Grands,
and gave them some cinnamon pita chips to go along with it.
I am proud to say I forewent the pita chips and ate mine right out of the bowl.

You could substitute the cantaloupe for mango or even pineapple, and I think it
would be just as tasty. I can’t wait to fix the mango version to serve over some
grilled salmon. Doesn’t that sound heavenly?

I have more than one favorite. I absolutely love basil! When looking for something sweet, though, strawberries do the trick. This cutting board is perfect. We are currently redoing our kitchen and this would match perfectly. 🙂 Thank you for the opportunity to win!
