The weather has finally cooled off here.
It is a relief. I didn’t find taking down Christmas decorations
in 80 degree temps very appealing, to say the least.
We spent New Year’s Eve at home with the grandloves.
My perfect kind of night.
I made them Buffalo Chicken Nachos (I will share later) –
and Potato Soup for me and The Hubbs.
This is one of our favorite soups, and I usually make this
in the crockpot but I got a late start on the day so it was
prepared on the stove top.
Frozen Hashbrowns Creamy Potato Soup

I am not sure what I love best about this recipe.
The fact that it is so creamy and delicious, or the fact that it is
so easy to prepare.
Like I said, it can easily be cooked in
a crockpot. Just add the ingredients, set the temperature
and go! I put together a little video for you to watch.
With some catchy, upbeat music I might add.

- (2) Bags of 20-oz. Frozen, shredded Hashbrowns *(I use Simply Potatoes found in the dairy case)
- (2) Tablespoons Butter
- 3-4 Stalks Celery, chopped
- (1) Medium Onion, chopped
- (1) Tablespoon fresh thyme, de-stemmed and chopped
- 1/4 Cup Heavy Cream
- 1/4 Cup Sour Cream
- (1) Small Block Cream Cheese
- (1) Can Cream of Celery Soup, or any creamed soup flavor (mushroom, potato, roasted garlic, etc)
- 4 Cups Chicken Stock
- 1/2 teaspoon salt*
- 1/2 teaspoon pepper*
- * use more or less salt and pepper to your desired taste
- *opt: toppings: sour cream, shredded cheddar, crumbled bacon, green onions
- (Stove Top Recipe) In a large pot set on Med-High heat, melt butter. Add onion and celery and saute until onions are just transparent. Add stock. Add frozen hashbrowns. Add remainder of ingredients and stir well. Taste and adjust accordingly with more salt and pepper. Cover, and reduce heat to medium-low, stirring often. Cook about 1 hour to 1.5 hours.
- (Crockpot Recipe) Add all ingredients into the crockpot, stir well. Set heat to Medium and cook about 3-4 hours.
