Okay, I have something to admit.
It may get a little controversial. There may be some discussion and even
heated debate that erupts. But, here goes.
(uh-hum. clearing throat…working up nerve.)
I have never bought into the theory that “it takes a village to raise a child.”
Nope. Not one single bit.
What I do believe is that it takes a good, solid family.
A family that works together and prays together – and supports each
other no matter what. A family that always has each other’s back.
So when Pillsbury asked me to create a recipe using one of their
biscuit products, and promote a recipe that was quick and easy and
perfect for a busy school night….I thought. I’m the man!
Um…wait. I’m the woman.
My son and daughter-in-law have three beautiful children – ages 7, 3
and 16-months. They have jobs, schedules, non-stop laundry, bills
to pay and homework and book reports and sports and well…
you get the hint. They are the typical All-American family.
That’s where me and Grandpa step in. We don’t rely on the “village”
to help out, we just rely on each other.
For example, Grandpa helps out by meeting Cole at the bus, taking
Miss C to the doctor, or running errands around town.
Since I love to cook, it’s only natural that I help out there with some
weeknight meals that are quick and easy, and can easily be completed
after work when its dinner time. Casseroles are my go-to recipes.
They can be assembled ahead of time, and then popped into the oven
when needed.
Pillsbury has a great recipe called Grands! Pepperoni Pizza Bake.
With only FOUR ingredients, this fantastic recipe can be whipped up
in under 30 minutes. Because with homework, baths, laying out clothes,
brushing teeth, bedtime stories and saying prayers – who has time to be
spending all night in the kitchen right?
You can take this basic recipe, and add your own twist to it. For example,
my little guys love mushrooms on their pepperoni pizza. I also added five
kinds of cheese…and their fave! Black olives.
My ultimate key to success? My Mama’s iron skillet. This will create a
super crispy outer crust…just like a real pizza fresh out of a wood burning
oven.
If this was my pizza, there would be a whopping amount of onions and
green peppers, too. You could also add some cooked Italian sausage.
I can’t wait to try this recipe using ham and pineapple. In fact – these biscuits
could be adapted for almost any casserole. How about a Chicken-Broccoli-
Alfredo version? Yea, that got your attention huh?
About 20 minutes in the oven and out came a bubbling Pepperoni and
Mushroom and Black Olive and Five Cheese Monkey Bread.
The house smelled heavenly while it was cooking. My theory is that
any recipe that makes your mouth water while it’s cooking has got to
be good.
A fresh green salad and some extra pizza sauce on the side for dipping,
and you have a complete and nutritious meal.
A glass of milk for the Grands. A glass of wine for mom and dad.
Now that’s what I call the perfect meal!

But, here’s a hint – don’t tell your 3-year old its called Monkey Bread.
Or, they will look at you funny, look at the dish, look at you again
and say, “Grammy, I no like eatin’ monkies.”


- (2) containers of Grands! Biscuits, cut into quarters
- (1) pkg. Pepperoni, rough chopped (reserve out 10 slices for the top)
- (1) pkg. fresh mushrooms, rough chopped (resrve about 10 slices for the top)
- (1) medium can sliced black olives, drained (reserve out about 2 Tbs for the top)
- (2) cups Shredded Cheese
- (2) cups marinara
- (2) Tbs Italian seasonings
- (1) teaspoon chopped garlic
- Preheat oven to 400 degrees. Prepare a casserole or baking dish with cooking spray. Add the cut biscuit quarters to a large bowl, pour the marinara over the quarters and mix well, making sure all pieces are totally covered. This will keep the pieces from sticking together. Next, add the pepperoni, mushrooms and black olives (minus the reserves). Add in 1 1/2 cups of cheese and the Italian Spices and garlic. Mix well using your hands. Pour the biscuit mix into your baking dish or skillet. Add the remainder of the cheese on top, then add the reserved pepperoni, mushrooms and olives. Sprinkle just a dash or two of Italian seasonings on top. Bake for about 20 mins, or until biscuits are done. (all ovens are different and cooking times may vary)
- Serve with extra marina on the side, if wanted. You can also add a 1/2 pound of cooked, drained and crumbled Italian sausage, or any meat and vegetable you like on your pizza.

View CommentThe “village” idea is way overrated and hasn’t proven to work. Many parents have expected the village…be it school, church, etc to do their job. Family is the way to go!!!
View CommentPizza looks yummy but what brought tears to my eyes was your comment about family. I have never advocated the village approach to family. When our daughters needed jibs and we needed employees, we hired family. Our grands came to the office from tiny babies thru middle school. When my youngest diagnosed with MS, we moved 1000 miles to be near in case she needed help. I am so happy to be able to be there when our children need us. And we know that they are there for us.

View CommentI’m with you Barb, forget the village, it’s the family that needs to be responsible for raising our children. I love Grands and make several things regularly with them but never tried a pizza version. I think your tip of cooking this in an iron pan is super brilliant! That’s how pizza hut gets their tasty crust! Now, if Pillsbury would just come up with a biscuit that was a little lower calorie we’d be all set! Can’t wait to try this!
