“Easy No Cook Food Processor Gazpacho”
I love to Cook.
Love. As in passionate.
Unfortunately, my waistline reflects this.
So, I try to fix this Gazpacho Soup as often as I can.
Since it’s served chilled, I make an extra batch, put it in a
large plastic pitcher, and “pour” myself a snack.
Think of it like a V-88, but without all of the preservatives.
Several years ago I started writing a cookbook called
The Lazy Gourmet. Where did that name come from?
While taking cooking classes at Le Cordon Bleu many years ago,
I was the one who was constantly thinking…
“If I substituted this for that I could achieve the same thing
in half the time.”
I think my Chef Instructors would call this recipe
Le Soup in la Machina.
Mr. Frenchy does not appreciate my
attempt at French.
attempt at French.
Here’s how I “cooked” the soup…
What??? Wait!!!!… That’s a….an…..um….
– a Food Processor!!??
Why, yes it is Mon Cherie.
(more French, I’m getting good now ain’t I?)
I am proud to share with you my…
Soup cooked in a food processor?
Can it be true?
Oh yea. And it’s one of my favorite all-time soups.
Gazpacho is a Spanish-style soup
made with tomatoes and veggies and served chilled.
Even if you do not have on hand any juicy, yummy Summer
tomatoes to use, fret not.
I substituted canned tomatoes.
(…if you don’t tell them, they will never know)
ssshhhhh….
Other than fresh veggies, you will also need red wine vinegar, lemon juice,
sugar, tarragon (dry or fresh), basil and salt and pepper.
While I was chopping my veggies, I put on some shrimp to boil.
I added in some Old Bay Seasonings right into the water to help
flavor the shrimp while cooking.
Bubba Gump would be so proud.
“Shrimps.”
You can load everything right into the processor –
… and after a good whirl …
You get this!
Yummy, delicious and healthy, too.
Here is a little tip:
I put all of my veggies (as well as the canned tomatoes) into the fridge
just before I make the soup. That way everything is already nice
and chilled, and ready to serve.
Serve it in margarita glasses as shown above for a fun twist.
Or, small shot glasses are fun and can be garnished with
fresh lime slices.
The chilled shrimp look great as garnish, but the taste plays well with
the cold soup, too.
This soup just bursts with freshness…
tomatoes, cucumbers, green peppers, onion and garlic…fresh parsley.
Veggie goodness at its best.
Best of all…. NO Cooking.
Yep, I named my “hope to complete one day” cookbook right.
The Lazy Gourmet.
I hope this recipe brings out the
“Lazy Gourmet” in you, too.
