If there is something we Southerners know how to do, it’s cook. And if there something we love to do – it’s eat. And we love to eat pork. Especially yummy pulled pork slathered in a good BBQ Sauce. I create my own BBQ sauce using a Southern Bourbon Whiskey. I generally make a large saucepan of sauce and preserve it in small mason jars for future use. The BBQ sauce is relatively quick to make, I just simmer it on the stove. And now – thanks to my new pressure pot – the pulled pork cooks lickety-split. I am sharing this recipe with you today, and I have a great surprise, too.

BBQ sauces are like fingerprints. Everyone has their own version and their own recipe. My version is pretty basic. All the ingredients are combined and simmered to the desired thickness on the stovetop. Sometimes I will make the sauce in a crockpot if I am making a larger batch.
We tend to prefer a slightly more tart BBQ Sauce over a very sweet one. And I have to always make a side batch of BBQ Sauce especially for my hubby and son who likes theirs with some heat. A liberal dose of jalapeño juice or cayenne pepper helps there.
One of the absolute fave foods we love to put my BBQ sauce on is Eastern Carolina-style Pulled Pork. Well, meat of any kind actually. Growing up in Eastern North Carolina, we ate a lot of pork and it’s still a favorite protein of mine. I love that it is so versatile and you can create so many recipes with it. My mama’s version is to slow roast it, sometimes all night in a low temperature oven. Me and my sister have cooked our Pulled Pork in the same “slow and low” method as our mama has done, and her mama did. Last year, I was sent a Pressure Cooker to try out and my life changed!!!!
This is the Power Pressure Cooker XL. I realize there is an element of fear when the words “Pressure Cooking” are heard. People imagine dangerous explosions and worse. I have to admit I have always been leery of traditional pressure pots and used an extra abundance of caution when using one. I had heard good things about the new varieties of Pressure Cookers and was super excited to try one. Naturally, I decided to cook my Pulled Pork Recipe, and put this Pressure Cooker to the real test. Could a modern day cooker give as good, or better results than an old-fashioned oven?

I am thrilled to report…and please don’t tell my Mama…I may never cook my Pulled Pork any other way now. Yes! I loved the Power Pressure Cooker XL results that much. I put in a large Boston Butt, my spices and ingredients and in one hour I had tender, delicious cooked pork.
Now if you are not familiar with the Eastern North Carolina style of Pulled Pork, you may be surprised to learn we use very few ingredients. Apple cider vinegar and crushed red pepper are the main two ingredients besides a liberal dose of salt and pepper. One thing that I do add is grated onion. I don’t want chunks of onion, hence the reason I cry my eyes out grating the onion. 🙂 You would think the vinegar would be overwhelming, but its not. It mixes with the juices of the pork and the red pepper flakes gives it the perfect amount of kick.
Traditionally, we don’t cook the BBQ sauce in with the pork. That is served on the side so it can be drenched to taste. (Occasionally add the BBQ sauce, but that is another recipe.) We love to serve our Pulled Pork Sandwiches with cole slaw and yummy fries. Is your mouth watering yet?
Every region of the country has their own style of BBQ. I also realize that the term “BBQ” means different things depending on where you live. BBQ in the midwest means Beef, and then there is the term “we are going to BBQ this afternoon.” But, here where I am from, when you say “BBQ” you are referring to Pulled Pork.
And to this Southern gal, it doesn’t get much better than that sweet, succulent pork piled high on a soft bun, some yummy, cold cole slaw and just a drizzle of Southern Bourbon BBQ Sauce.
And now that I can throw it in my Power Pressure Cooker XL and prepare an amazing dish in about an hour – that just makes me happier than a kitty in a box. 😀

- 1/4 cup packed Brown Sugar
- 1 teaspoon honey
- 2 Tablespoons Apple Cider Vinegar
- 1/2 Cup Ketchup
- 2 Tablespoons Worcestershire sauce
- 2 Tablespoons Tomato Paste
- 1/4 Cup Bourbon
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 cloves garlic, crushed
- 1/4 onion, grated
- 1 tsp lemon juice
- *(opt: 1/4 teaspoon cayenne pepper)
- Combine all ingredients in a small saucepan and simmer on low for about 20-30 minutes. You can press the sauce through a strainer if you prefer a perfectly smooth sauce.

- 2 Pounds Pork Shoulder or Pork Butts
- 1 Cup Apple Cider Vinegar
- 2 teaspoons Red Pepper Flakes
- 1 small onion, grated
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 teaspoon garlic powder
- Slice pork into (2) smaller portions so it fits into the Cooker easier. Salt and pepper generously prior to placing in pot. Sprinkle with garlic powder and pepper flakes. Pour cider into bottom of cooker, add garlic and onion. Place pork sections into Cooker. Place lid securely per manufacture's instructions. Cook 1 hour. Allow all of the steam to completely release prior to opening cooker. Allow to cool slightly, then remove meat from liquid. Reserve the liquid. Cut up meat, or shred, as desired. Add more salt and pepper as needed. The cooking liquid can be served on the side as an "au jus."

Hi Barb – It’s good to hear you know when you need to take a rest and take care of yourself. I know how hard it is to let things go when you’re trying to get things done. I’m looking forward to trying your bbq sauce.. I truly love good bbq and sometimes low and slow, although delicious, is so hard to wait for as well as heating the house up when it’s hot outside. Thank you for this, Barb! We love to make BBQ just about anything, but of course we mean PORK. I’m very much in the vinegar camp, but I do like to have sauces on the side. . . and I like BBQ ribs with some sauce applied during grilling. So a BOURBON sauce? Count me in! Bourbon is a staple at our house. (By the way, my husband makes a killer Old Fashioned, so if you’re ever in the need for a delicious cocktail, come to Durham!)

The pictures of these sandwiches look so yummy! I bought a pressure cooker on Amazon in the past and it stopped working on my first try cooking with it. They replaced it only to have the exact same issue happen again so I finally said enough was enough and they returned my money.
