“Cheater, Cheater, Pumpkin Eater!”
I will never forgot the first time someone
said that to me on the playground.
#1: I was mad as fire. Spit fire.
My Mama had taught me not to cheat.
She always said,
“you will never have to cheat if you
are better than everyone else.”
Good advise even today, huh?
#2: “Pumpkin Eater?”
I mean, what kind of cut down was that?
Even with my very limited 3d grade
experience, I knew that almost
everyone ate pumpkin at sometime or
another.
Hello??? Thanksgiving?
Well, I am sad to say – that I am a cheater.
Gasp!
“What you talkin’ ’bout, Willis?”
Yes, I am a cheater.
And I am very good at it. 🙂
Cause my Mama also said, if you’re gonna
do something then do it as best as you can.
You see, I cheat in the kitchen.
I like to present myself as a gourmet cook,
but in real life. I’m not. Nope. Uh-uh.
Not even close.
Take this oh-so-yummy dish you see above.
Pumpkin-Butterscotch-Pecan Dip
with Ginger Snaps.
Let me just say, even if you have already
completed your grocery shopping for your
Thanksgiving dinner – run thyself
back to the market and get these basic
ingredients to make this dip.
You will thank me.
Your guests will thank me.
Here is all you will need:
(1) can pure pumpkin puree
(yes, you can go thru all the trouble of cooking and pureeing your own
pumpkin, but this will NOT qualify you to be a “Lazy Gourmet”, like me.)
(1) Small Container of Whipped
Cream Cheese (or regular will work, too)
(1/2) Cup Sour Cream
(1) Package Instant Butterscotch
Pudding Mix
(1-2) Tbs Pumpkin Pie Spice
(you can start with one TBs and add
another if you want more “umph”)
(1/2) Cup Chopped Pecans
(these are optional)
…and here is my little secret…ssshhhh!
Just a little drizzle of
French Vanilla creamer.
(If you don’t have French Vanilla Creamer,
simply use milk.)
Now dump everything into a food
processor, minus the creamer.
Give it a whirl. Drizzle a little creamer in,
as needed. Just a drizzle will do ya’.
It’s even okay if you sing a little dittie…
“Cheater! Cheater! Pumpkin Eater!
Made a Dip, and Life is Sweeter!”
(Give me a break, I’m not a song writer)

Now go out and grab a Pumpkin Pie Punkin’,
cut the top off, scape it out, put the seeds
aside to make
“Roasted Fiesta Spiced Pumpkin Seeds”
for later… then pour in your dip and
surround with ginger snaps and pretty
faux fall leaves.
Martha step back! There’s a new chick in town!

Top it off with some extra chopped nuts and
a dusting of pumpkin pie spice.
Now, let’s get back to that girl who called me
a cheater on the playground in the 3d grade.
