Mojitos. Mmmmmm.
I mean seriously, it’s my go-to cocktail and just thinking of them makes my mouth water. LOL Is that bad? That the thought of a yummy and sweet-tart cocktail makes my mouth water? 😀 We are having a few friends over for New Year’s Eve. Nothing big. Just a few couples for drinks and “bring an appetizer to share” kind of event. Low key – just like I prefer our New Year’s Eve celebrations. I had a “theme’ drink for our Christmas Party, and thought this would be a fun drink to offer for New Year’s Eve. Mojito with Pomegranate. Now is your mouth watering, too? 🙂

A mojito is traditionally made with lots of mint, some lime and sugar, club soda and of course, rum. It requires that the mint leaves, lime and ice be “muddled together’ to bruise the leaves to release that fabulous mint flavor. I have had mojitoes when the mint leaves were not muddled, or crushed, and the taste just was not the same.
I have a little confession. For years I was not a pomegranate fan. I kinda thought it was a “fad” thing and besides, how the heck did you get out those little seeds anyway?
Then, one night I went to a Pampered Chef party and the hostess served a Pomegranate Punch. I was hooked. How could that funny looking fruit with the seeds so hard to extract have such a punch of flavor?
Several days later, I purchased several poms and went home and, after watching a few videos, mastered the fine art of tapping out the seeds. 😀 And the rest is history. If you have not tried pomegranates, I encourage you to do so. They are packed with tons of vitamins and especially anti-oxidants, and once you pair it with rum and mint you will be simply invincible. Ha!

MATERIALS NEEDED:
- Mojito Glasses
- Wood Muddler (opt)
- Pomegranate Juice
- Stir Sticks (opt)
- Fun Cocktail Napkins (opt)
- 1/4 Cup Fresh Mint leaves, washed and dried
- 2 teaspoons sugar
- 1 1/2 ounces light Rum
- 2 1/2 ounces Pomegranate Juice (purchased)
- Lime Wedges
- Club Soda
- Pomegranate Seeds (optional)
- Select a tall glass with plenty of room for ice. In the bottom of the glass, add a few cubes of the ice, sugar and 3-5 mint leaves. Muddle, or crush the leaves with the sugar and ice until the leaves are bruised. Fill the glass with ice. Add rum, pomegranate seeds and pomegranate juice, and top off with Club Soda. Squeeze a fresh lime on top and garnish with a mint leaf. Yummy!
