I have a secret.
I have lost 22.5 pounds and two full sizes. I will share more later. But, so much has changed in my life. At 52 years old, I have a whole new respect for food and what I put into my life. As you know, I lost my sweet Daddy three months ago. We lost him to a stroke and high blood pressure, which I have suffered with for several years. High as in HIGH. His death was my wake-up call and I knew I had to make changes. Even my doctor said I was a walking stroke. Here is one of my fave “treats” which I keep handy.
Easy No Bake Energy Bites
I love to eat. It’s a curse. I love to cook. That is a blessing. I love everything about food. But, food hated me. Evidence of my many onset-adult allergies is proof of that. When you can’t enjoy simple things you have all of your life any longer – like bread and fried foods and cheese, to name a few, you go into a culinary slump. That is what happened to me. I began to feel as if I was being punished. Sad, huh? But, once I wrapped my head around the fact that although food had made me sick, food could also heal me. And that is the journey I started on.
(No Bake Energy Bites Ingredients)
These Energy Bites are a welcome treat around 3pm. 3pm is when I would grab my once fave beverage of choice, an ice-cold glass of Coca-Cola with a squeeze of lime. It did the “energy” job for a few minutes while my body processed it’s energy high, and then I crashed. It also did the job on my tummy, butt and in in-between. I wasn’t just overweight, folks. I was FAT!
(Toast your coconut in a dry pan on high heat, stirring until toasty brown)
I have a long ways to go. But that twenty-two plus pounds is a miracle considering my almost non-working thyroid is still quite sick and my auto-immunes say on a daily basis…”oh you feel pretty good today? No worries I’ll fix that.” 🙂
(No Bake Energy Bites Mixture)
I made these a few weeks ago and the Babies fell in love with them. So, I will pack one to go into their Bentgo Lunch Boxes for school. They are so easy to make. I usually double the batch. They are no bake so they are no fail. LOL This recipe does include peanut butter, so if you have a peanut allergy you could easily replace that with almond butter or another type of “butter.” I think Hazelnut Butter would be divine!!!
So, here is the easy recipe….enjoy!!!!


- 1/3 Cup Organic (or local) Honey
- 1 tsp Pure Vanilla
- 1 Cup Raw, Organic Steel Cut Oats
- 1/2 Cup Organic Peanut Butter or PB Substitute *( I used crunchy, you could use smooth)
- 2/3 Cup Toasted, Sweetened Shredded Coconut
- 1/2 Cup Organic Ground Flax
- Approx 6 Tbs Chocolate Chips or Chopped Chocolate
- In a medium sized mixing bowl, mix peanut butter, honey and vanilla until creamy, set aside. In a small frying pan on high heat, add the coconut with no oil, etc. Stir until coconut is a light, toasted brown color. Add coconut and remainder of ingredients to the peanut butter mixture. Stir well. This mixture will make about a dozen 1.5" balls or you can make smaller ones. To make the balls, or "bites," simply scoop up some of the mixture and compress it in your hand, then roll and shape into balls. Lay on a cookie sheet and chill for about 10 mins in the freezer. I store mine in a plastic, air tight container in the fridge. Enjoy!
Even my hubby is in love with these, so I see myself making several batches of these throughout the week. I did not figure up calories and protein and all of that. I think it would be pretty easy to calculate if you needed that info.

Those sound really good ! I am trying to get back in the habit of eating better and watching what I eat. I had a couple of stents placed about 12 years ago, right before I turned 50. At that time I was religious about watching what I ate and working out. Unfortunately with all that happens in life I have gotten lazy about it, and I could stand to shed a few pounds. I do walk everyday, mostly because of my dogs, but I can tell I could stand to step it up. I have problems with my feet and knees , so low impact is for me. Oh the joys of getting older, lol.

I use to scuff at the idea of yoga. “I’m not a granola eater yoga kinda gal.” LOL I cannot do high impact exercise because of an erratic heartbeat, and was told to try yoga. I LOVE it. And I am getting toned again. You should give it a try. I hope you can get back to healthy eating again. I know you will feel better. Please take care of yourself. xxoo, Barb
