I love a casserole !
In fact, I love anything that is easy to make, is filling,
and my family will eat.
So when I can create a casserole that becomes a hit, especially with
the Grandloves – well, that recipe becomes a keeper!
Or, in this case – it’s a “Winner! Winner! Rice and Chicken Dinner!”

Mexi Cheesy Rice ‘n Chicken Skillet

I am an advocate for homecooked meals.
Especially on the weekends when the grandchildren are here.
Eating at the table is a must.
Saying grace before dinner is a must.
No distractions. No phones. No TV.
Just me and Grandpa and our favorite, three little ones
who are allowed to talk until their heart is content about what they love,
what they think and feel – and what makes them happy.
There is one condition.
They have to eat! 🙂
This dish is one of their faves and one they ask for frequently.
Chicken Tenders, Rice, Cheese and topped with crushed Doritos.
I start with a large pot of my Homemade Mexican Rice.
(see recipe below)
Next, add a bag of thawed Walmart’s Tyson Chicken Nuggets to a ziplock baggie,
and add 3 Tbs of Taco Seasoning Mix. Shake well until the nuggets are coated.
Layer a skillet with half of the tenders.
Top the nuggets with a layer of the rice, about half of the mixture.
Then, sprinkle a layer of cheese, chopped green onions and
fresh, chopped cilantro.
Then, repeat with a second layer.
Finally, sprinkle on some crushed tortillas, fritos or Doritos.
Bake in a 400 degree oven for about 20 minutes until
the cheese is bubbly.
