I promise this is NOT one of the ingredients!!! LOL
Start with a medium size onion, rough chopped, in a saute’ pan with a few teaspoons of olive oil.
This is how perfect caramelized onions should look. I could eat this pan of onions by itself. Mr Grits would NOT be very appreciative of that, I’m sure. LOL
Stir and let heat through. Once the beans are warmed, add in 2 Tbs of balsamic vinegar. This will create a steaming action. Next, add two packets of sweetener. Stir well, turn down the heat to low and let simmer. If you want to add the cherry tomatoes, it makes a good dish better – but you won’t miss them if you do not have them on hand. I simply half the tomatoes, and allow them to marinate in balsamic vinegar, salt and pepper – while the beans are being prepared. I top the beans with the tomatoes prior to serving.
So, what did I do with the remainder of that half can of Chicken and Mushroom soup? I added it to my instant mashed potato flakes! Once again – all the true chefs are gasping in agony and covering their instant flake virgin ears. Like I have said before – instant potato flakes are a staple in my home for when I need to prepare a meal on the quick. I use half water and half chicken stock and butter. Once the liquid is ready, I mix in half the flakes, add the 1/2 can soup – whisk well…and add more flakes, as needed. I do not use a recipe. I could not even begin to tell you the amounts I use. (I know – frustrating, isn’t it? LOL) But, I promise you – even the most die-hard homemade masher chefs will not know your secret.
So here is “Supper.” Nope – its nothing fancy. I didn’t even bother with a garnish. It’s just simple, comforting food meant to ease the worries and hassles of a long day.

Oh, yummy! I’m definitely going to make your green beans. I’m pretty good at making gravy already. And I use instant mashed potato flakes all the time. With a daughter that goes to dance class four nights a week, I need a quick, early dinner (supper!).

I, too, make cream soup gravy! My personal comfort food is white rice with cream soup gravy. My hubby knows I’m upset about something when I’ve steered away from brown rice and sauted veggies.

I love southern cooking. That’s what I grew up on. I don’t know why I’ve never thought to do it, but I’ve never used butter in making gravy. I’ve always used oil. I think butter would be better. I love to make gravy this way in the pan after I’ve fried chicken in it. All the little scraps of brown that is left really makes it tasty. I just use milk for the liquid. Lots of pepper makes it yummy.
