I have a recipe I call my “Proposal Spaghetti.”
Over the years, it’s also become…
“I’m Sorry I Spent Too Much on Those Shoes Spaghetti”
along with, “Sorry You Didn’t Make the Team Spaghetti”
and lots of other occasions.
But, it will always – first and foremost – be our “Proposal Spaghetti.”
I am so happy to share my Three Meat Mushroom Spaghetti recipe
with you as part of a large Italian Dinner Feast Blog Hop.

Mine and The Hubbs’ first date was at a newer Italian
joint that had just opened in town. We had a small booth,
red wine, the standard dripping candle in the chianti bottle.
Very romantic.
Oh, did I mention this was a blind date? :-O
We each ordered spaghetti with meat sauce.
He ordered a side of meatballs.
It. Was. Awful.
Beyond awful, in fact.
We walked next door to McDonald’s afterwards and ordered
Big Macs. I think I fell in love with him right there.

Fast forward 10 months later, I surprised him with dinner
after he had been out in the field for a week. He came home in
his smelly camouflage, mud-covered boots, sweat-covered body –
and I could have cared less.
I fixed my Three Meat-Mushroom Spaghetti.
The truth of the matter is he almost fell asleep at the table.
He was a Marine and a tough one – but a week of no sleep
took it’s toll.

The next night, we had plans to take my son bowling.
And right there, between the 4th and 5th pins,
he proposed to me and my son.
I think my son said YES! before I had the chance 🙂

A few days later, he told me that he figured if a woman could
cook spaghetti as good as I could, he’d better swoop me up before
someone else did. LOL
Hence, it became our “Proposal Spaghetti.”
I have given this recipe to lots of gal-pals.
I think the “proposal” record is 3-2.
Not bad I guess.

You may not need a “proposal” right now – but keep in mind
it also works for “Oh! Did the Master Card Bill Come In?”

- 1 1/2 Cups Coconut Milk
- zest of one lime
- juice of one lime
- handful of roughly chopped fresh cilantro
- 1 Tbs Taco Seasoning Mix
- (2) Bags Uncle Ben's Butter and Garlic Rice
- (1) Rotisserie Chicken, shredded
- (1) Large Can Black Beans, drained and rinsed
- (1) small can chopped green chiles
- 1 handful rough-chopped fresh cilantro
- 1 cup Mild Salsa (you may choose to use more salsa and hotter salsa)
- Tortillas
- Optional Toppings: shredded cheese, chopped tomato, chopped green onion, sour cream, fresh avocado slices, fresh lime slices, etc.
- Rice: Add coconut milk to a saucepan on medium heat. Add lime zest, lime juice, cilantro, seasoning and rice. Stir well. Allow to come to a light bubble, turn heat on low and cover until most of liquid is absorbed.
- Burritos: Add shredded chicken, cilantro, green chiles, and salsa. Stir well and heat through. Roll meat mixture in a tortilla and add additional ingredients as desired.
