I know, I know. I’m on an herb kick here lately, huh?
I can’t help it. It’s one of my weaknesses when I’m at the garden store.
Next week, I need to harvest my basil and mint.
If you know anything about the mint family, you know that I have it
coming out of my ears right now.
Many years ago in the late 90’s, looooong before blogging was even
heard of, I wrote a website called The Everyday Decorator.
Some of you may remember it. (Oh yes, it’s still out there in
internet-land, where my home was filled with Cabbage Roses and
lots if design styles that now make me say to myself…
“What was I thinking?”
I wrote an article about what I did with an abundance of
harvest of herbs. I still do that to this day.
Basically, I chop them up and freeze them in ice cube trays.
I add one teaspoon of chopped herbs in each ice-cube
opening. Once frozen, I pop them out and place the
herb cubes in ziplock bags marked with the type of herb.
You can fill your trays with either water or oil. When you need some
“fresh herbs,” just grab a cube from your ziplock baggy and throw it in
I love to create mixtures of herbs such as “Provencal” using Rosemary,
Tarragon and Thyme, for example. Great in seafood dishes, btw. Yum!
