Eggs, asparagus, mushrooms, onion, and cheese.
The red pepper is optional – I decided to save it for the
Roasted Veggies! But it’s a great addition to this egg dish
and adds pretty color, too.
While your veggies are cooking, add your mushrooms to
the onions when the onions are about halfway cooked.
(just starting to get transparent)
You can chop the mushrooms or keep them whole.
These are Baby Portabellos. Keep in mind the cooked
mushrooms will shrink.
Fill each cup about halfway with the mushroom/onion
I used 10 large eggs. I like to use large eggs because
I think its more value for the money.
I also added about 1/4 cup water. I would have
preferred to use cream…but keep in mind I am watching
the ole’ carbs.
A few tsp of chopped chives adds a great flavor…

Oh, that looks wonderful. Unfortunately I can’t eat eggs so I will have to enjoy them with my eyes.
The grilled veges look yummy…. we do a lot of them in the summer while we grill chicken or burgers.
