Comfort comes in many shapes and sized and tastes.
Comfy throws, warm baths, a cup of tea…and a scrumptious meal which soothes the soul. As you know, my hubby and are are extreme Anglophiles. When we travel across England, we prefer old (the older the better) pubs which serve traditional English fare, or “pub food.” Fish and Chips. Bangers and Mash and one of our favorites…Shepherd’s Pie.
What is now the dish we have come to know and love, the Shepherd’s Pie, had it’s early beginnings as “Cottage Pie.” It was a way of using an inexpensive food, potatoes – and making it stretch a long way with leftover meat and vegetables.
No matter what you call, we call it yummy! I make mine the easy way, with ground beef. I have also been known to “Southern-fy” it and add a cornbread crust. Yes! It’s fabulous if you have not ever tried it. Here is my Easy Shepherd’s Pie Recipe.

- 1 1/2 lbs. Ground Beef
- 2 cans mixed vegetables (carrots, corn, potatoes)
- 1 onion, chopped
- 1 clove garlic, minced
- 1 Tbs tomato paste
- 1 tsp thyme
- 1/2 tsp nutmeg
- 2 Tbs fresh chopped parsley
- 1/2 cup milk
- 1/2 sour cream
- 1 Cup Beef Stock
- 1/3 cup AP flour
- 3 Tbs butter
- 1 tsp. salt
- 1 tsp. pepper
- *optional: paprika
- *optional: shredded cheddar
- 6-7 medium sized potatoes, peeled and cut into about 1/2" pieces
- 1 1/2 Cups Milk
- 1/2 Cup Heavy cream
- 1/4 Cup Sour Cream
- 2 tsp salt
- 1 tsp white pepper
- In large pot, fill with enough water to cover cut potatoes. Add a few pinches of salt to the water. Bring to a boil, reduce heat and cook potatoes until done. Drain.
- In a small saucepan, bring to low heat milk, cream, butter and sour cream. Mix warmed milk mixture to drained potatoes, add salt and pepper, and using a mixer, beat potatoes until smooth.
- While potatoes are cooking, melt butter in a large saucepan on medium high heat. Add chopped onion and garlic. Stir to prevent garlic from charring. When onion is translucent, add ground beef. Cook until browned. Drain beef/onion mixture. Add flour and stir in well. Meat mixture will be thick. Add Beef stock, tomato paste, sour cream, milk, thyme, nutmeg, salt, pepper and 1/2 of fresh parsley. Mix well. Allow to heat through until sour cream and tomato paste are melted. Add drained vegetables and stir.
- Place beef mixture on the bottom of a large 13x9 casserole dish. Spoon potatoes on top of beef and spread evenly. You can add shredded cheddar cheese on top, about 1 1/2-2 Cups,or garnish with paprika. Place the casserole under a broiler to melt cheese. Garnish with remainder of fresh, chopped parsley.
- * If you wish to try my "Southern-Style Shepherd's Pie" simply mix a batch of your favorite cornbread recipe and bake in the casserole prior to adding potatoes and beef mixture.
- ** You can also use frozen peas and carrots, or just canned peas and carrots, or any combination. You need to pre-cook the frozen vegetables prior to adding to the beef mixture, or allow the beef mixture to simmer long enough for the vegetables to cook.

Looks yummy but I’d have to make some changes due to my food sensitivities. Switching to gluten free flour wood be easy but I’d also have to find a substitute for all the dairy. Fortunately I can eat goat cheese and I have used goats milk cheeses to add richness. I have a friend who uses coconut milk creamer in place of cream. I plan to pick some up the next time I shop. I’m so sorry you have autoimmune issues. My body responds to dairy, gluten, cashews and applies with joint pain/inflammation and accidental exposure can really impact my quality of life. Take care of yourself!!

View CommentMom was a pretty simple meal maker. Meat and potatoes were pretty common. Yet she never made this. And I’ve never eaten it anywhere! It seems like an easy meal, and looks yummy, so perhaps I’ll have to add it to the list of to-do recipes! Thanks so much for sharing!
View CommentI make Shepherds pie but a MUCH simpler version without a doubt.. and I use creamed style corn instead of peas. I just may have to try your recipe. Love to check out your blob.. thanks for all the good things you take time to share.

View CommentYour recipe looks nothing like the picture. I see peas, not canned vegetables and the potatoes are on top, as is customary in shepherd’s pie. Could you please clarify these observations for me? Thanks.
View CommentSomeone told me I had goofed on the recipe. Yes, the potatoes are on top. My fingers were typing quicker than my mind. Yes, I use canned peas and carrots for this one but normally I use the pea/carrot/potato combo – you can use any variation you choose. It will still taste the same. I will get the recipe edited, thanks for letting me know.

View CommentHello – I totally agree with you. I love comfort food and shepherd’s pie is one of our favorites. It has been a long while since we had it the old fashioned way because of food sensitivities. Your recipe sounds so delicious. We avoid dairy so we use pureed sweet potatoes with coconut milk. It’s not the same as the real creamy mashed potatoes, but it does the trick most of the time. Thanks for sharing – I may have to splurge and try this with cornbread!

View CommentBasically everything is already cooked and warm once assembled, so no cooking is really necessary unless you add cheese and then you will want to place it under a broiler for a bit to melt the cheese. When you reheat the frozen one, I would recommend thawing it prior so you don’t have to heat it as long and the potatoes don’t dry out. Hope you enjoy it.
