I am no baker .
Never have been, never will be.
And at the risk of y’all throwing empty boxes of
Little Debbie cakes at me, I am not much of a
“sweet tooth” person. Not even chocolate.
{ ducking }
But, I do realize when we entertain and have
guests over, there is a need for desserts.
I have a small repertoire of simple and easy
desserts, and this is one.

When it comes to desserts, I am no fool.
I stick with what is easy and within my capabilities.
My Grammy was an excellent pie maker.
Her flaky crusts would make grown men cry.
I, unfortunately, did not inherit her flaky crust gene.
So, what does one do when their genes are flakeless?

Puff Pastry.
The ready-made pastry of non-Champions.
😀
Puff pastry, pastry cream and fruit.
Winner, winner!

Quick ‘n Easy Cheesecake Bites by The Everyday Home
I love using these little pastry cups.
They create miniature, bite sizes of goodness.
They are also perfect for savory type appetizers.
(I will share one of those soon.)
Simply bake the cups as directed on the package
and fill with a pastry cream or filling of your choice.
I whipped up a No-Bake Cheesecake Mix.
I will be serving these for our July 4th Celebration, so
I decided on blueberries and strawberries.
I piped in the cheesecake filling using a baggie snipped
at the very tip, and topped with some fruit and
tiny mint leaves from my garden.
Easy, easy, easy…

Little, crispy pillows of lemony, cheesecake with the
added taste of a fresh fruit topping.
Seriously, you can pop these in your mouth
like….well…popcorn. 🙂

I served these with some Mason Jars of
Strawberry Spritzers… I will share this recipe
next week. Patriotic napkins and jute string
create cute glass toppers, and don’t you just love
the stars and stripes straws?

I think what I love most about these little
puffy pastres is that they are not super sweet.
If you aren’t a “con-aye-sue-er” of cheesecake,
you could use a mixture of marscapone and
cream cheese with a dab of almond.

You can pre-bake the small puff pastry cups the day
before, and make the filling in advance, too.
They only take minutes to assemble.

I love how cute they are gathered on a white, footed dish.
My baker-helper couldn’t wait to get his
hands on these. I didn’t think they would make it
through the photography session.
(I may have had to slap his hand away a few times.)

Finally, I gave him the thumbs up, and I think he
consumed three of them before I could say…
“Ok, I am done with pictures.”

pies where you are now. I know your pastries
are “angelic.”
I’m sorry I didn’t get your Baking Gene…
but I did inherit your need to hoard dishes and fabric.
So, I guess there’s that.
