I love eggs.
I love eating eggs and cooking with eggs and hopefully soon I will be “growing” eggs. We eat a lot of egg dishes here at The Everyday Home. Sometimes it’s Benedict Style for breakfast or a Frittata for dinner. Sometimes it’s as simple as egg salad. I buy eggs by the large pack. Even my babies love eggs. They love having “breakfast for dinner.” I am planning our Easter Brunch and found these amazing recipes and thought I would share them with you.

Do you remember years ago when they said “don’t eat eggs they are bad for you!” then a few years after that The American Egg Farmers Association (ok I made that up) started a campaign saying how healthy they were and then all of a sudden, eggs were back in style. Well, this Farmer’s Daughters didn’t heed any warning and didn’t need a commercial campaign to tell me I could eat them again.
Eggs have always been a large part of my life. As the baby in the family, it was my job to gather the eggs each morning. I’m gonna tell you…because of this I will NEVER, ever own a rooster as long as I live. I still have the scars on my hand where the family rooster would attack me.
I am putting together our Easter Brunch Menu. I love brunch on weekends, so these recipes will be put into my repertoire to use later, as well. I can’t wait to try these, and I think you will feel the same way. Let’s get started!
1.) Deviled Eggs Benedict
The Yellow Bliss Road shares her Deviled Eggs Benedict and all I can think of is…how would you stop yourself from not eating them all? 😀 These combine two egg favorites all into one simple bite. Oh my!
2.) Egg Croissant Casserole
I’ve made lots of Breakfast Casseroles, but never using croissants. When I spied this Croissant Breakfast Casserole from Woman’s Day I knew it would be on the menu in our very near future. Doesn’t this look and sound delicious?
3.) Cheesy Bacon Egg Hash
I have to tell you, I love me some hash! I make variations of of different types of hash on a regular basis. Some as Main Dishes and some as side dishes. (I love my potatoes. Don’t hate!) 😀 Cafe Delights added bacon and baked eggs and my, my, my – lip smackin’.
4.) Avocado Bacon Eggs
This recipe by Lil’ Luna had me at avocados. 🙂 I have fixed this Baked Egg Dish many mornings. The baked avocado takes in a delicate, creamy consistency. I actually love to sprinkle a bit of goat cheese on top and add some fresh herbs. Doesn’t this make you wanna go buy some avocados?
5.) Asparagus and Smoked Salmon Tart
There is no doubt, this dish by Living Lou will make it onto my Easter Brunch Menu. Combining some of my favorite foods all in one – eggs, asparagus, goat cheese and yummy, yummy smoked salmon. My mouth is watering onto my keyboard right now. 😀
6.) Fried Egg Grilled Cheese
Because I know my babies aren’t into smoked salmon and goat cheese and all those “adulty” foods, I saw this and knew they would adore this version of a classic grilled cheese combined with a fried egg by Great Grub, Delicious Treats. I know they will LOVE these.
7.) Overnight Eggs Benedict Casserole
When I think of eggs benedict I can’t help but think of my sweet Hubby. It’s usually what he orders when we go out for brunch. I love a good ole’ casserole that I can fix and forget. This Eggs Benedict Casserole by Baker Bettie fits the bill all around.
8.) Overnight Mini Baked Egg Casseroles
When I saw these Overnight Mini Baked Egg Casseroles by Yummy Mummy Kitchen, my original thought is that they would be perfect. That is until I did a mental headcount and realized I didn’t have anywhere near enough ramekins. 🙂 But, if you are preparing Brunch for a smaller crowd, this is a great idea!
9.) Breakfast Egg Sliders
I love the idea that these can be fixed to serve a larger crowd. And let me tell ya’, The Everyday Home usually consists of not only a larger crowd during the holidays but a hungry crowd, as well. 🙂 Mom Endeavors shows how easy it is to make these Cheesy Egg Breakfast Sliders. They’re a winner!
10.) Cheesy Italian Red Pepper Frittata Muffins
Here’s another recipe that I am pretty sure will make the menu. I love the idea that I can make the Cheesy Italian Red Pepper Frittata Muffins by Delightful Mom Food and place them all on a large platter. If I tell the babies they are “muffins” I may sneak them by them, too. 😀
11.) Asparagus Mushroom Swiss Bake
Is there a better combination than asparagus and mushroom and swiss? I mean, I think you could put it on a roofing shingle and it would taste good. But, I like Honey and Birch’s version of her Asparagus Mushroom Swiss Egg Bake better.
12.) Easy Shakshuka with Feta
I have to be honest. I have never even heard of Shakshuka until I ran across it on Pinterest. But, I was immediately interested and wanted to know more. It’s a Middle Eastern dish basically of Baked Eggs in a Tomato Sauce. Sounds pretty simple, huh? The tomato sauce and the fact it tends to be a bit spice makes this a perfect Brunch Recipe. Umami Girl shares her fabulous recipe and I can’t wait to try it.
