When you think of making chocolate pudding, I know its easy to just whip out the ole’ box of instant mix and some cold milk and voila’ – pudding. But I am here to tell you – if you have ever tasted the made from scratch kind you will never want to settle for the boxed version again. And its so incredibly easy to make. I decided to up the flavor profile a bit and add some espresso to my recipe. Oh my sweet heavenly goodness. Chocolate + Espresso = Divineness.
Homemade Espresso Chocolate Pudding

Before I share my recipe with you, I want to tell you a little bit about what is going on with me. I ended up in the hospital for almost a week and they ultimately performed a Heart Cath on me after I failed a stress test. Thank the good Lord, the Cardiologist didn’t find anything too abnormal but I did have to make some diet and lifestyle changes. I am blessed it wasn’t anything more damaging. Also, I visited a new Endocrinologist and I am hopeful after meeting with her. That said, I decided to take some time away from blogging. I know it doesn’t seem like blogging is stressful, but it is. Especially if you do it full time as a job. But, I am refreshed and ready to start again. For those of you who read my first romance novel I am happy to say I am eagerly working on the second book in The Cotswolds Series and hope to release it on Amazon and Kindle in a few months. My first book, At the Water’s Edge will be available for download soon, too. Thank you so much to everyone who has sent me such sweet messages and emails inquiring about my absence. I have some super exciting news!
Have you ever wanted a Nespresso machine but just couldn’t afford one or thought you would not use it? Guess what? I am so, so excited to announce I am giving one away!!!! I was contacted to try out Nespresso’s newest machine – the Inissia model. Here’s what I love about it:
- It is compact and doesn’t take a lot of space on our countertop. In fact, it sits perfectly beside our regular coffee pot.
- This newest model uses Espresso Pods. No measuring or guessing. You just pop one in and get a perfect cup of espresso every time.
- It heats up fast – in 25 seconds.
- It is affordable!!
I love that it has become on and The Hubb’s little indulgences at night. A couple of nights ago, we had some friends over for an impromptu cookout. I wasn’t sure what I would make for a dessert. Its been really hot here in Eastern North Carolina. I mean really hot! So I decided to make a pudding which would be decadent but not too heavy. Instead of plain ole’ chocolate pudding, I decided to step it up again and add some espresso.
Your new Nespresso comes with a box of espresso pods. You simply fill up the water tank on the back and pop in a pod. It could not be easier.
Once the pod is placed you lower the handle and hit the size cup (small or large) that you prefer.
The water heats within 25 seconds, and about 20 seconds later you have the perfect cup of espresso.
I only needed one cup full when I was making my Chocolate Pudding. I love that I can now offer either regular coffee or espresso when we have guests.

So what does Chocolate Espresso Pudding look like?
It looks pretty much like regular chocolate pudding, but once you bite into it – you get that heavenly combination of chocolate with a mild coffee taste. I also made an Almond-Infused Whipped Cream to top it with. I served the pudding at room temperature but right before serving, I added the cold whipped cream. It was fabulous.
I used standard juice glasses to serve it in, but you could use any type of dessert receptacle. Finally, add some texture on top with some cookie crumbles, etc. I added amaretto cookies to go along with the Almond-Infused Cream. Soooo good.
Here is my easy recipe in printable format!
- 2 cups Whole milk (or 2% can be used, but you need a milk with fat for a better pudding)
- 2/3 cup sugar
- 1/3 cup unsweetened cocoa
- 4 tablespoons cornstarch
- 1/3 cup espresso or 1 Tbs Instant espresso
- 1/8 teaspoon salt
- 1 large egg, lightly beaten
- 1/2 (4-oz.) semisweet chocolate baking bar, chopped
- 1 teaspoon vanilla extract
- 1.) Using a medium-sized saucepan - whisk together the milk, sugar, cocoa, cornstarch,espresso, and salt over medium-high heat. Whisk constantly while cooking, about 5 minutes or until mixture is hot. Break egg into a small bowl. Pour out about 1/3 cup of the heated milk mixture and gradually whisk mixture into egg. This will temper the egg so it does not scramble. Finally, whisk the egg mixture into remaining hot milk mixture in saucepan.
- 2.) Continue cooking the pudding mixture, whisking constantly, for about 3 minutes more or until mixture thickens. Remove pudding from heat and add chopped chocolate, stirring until chocolate melts and mixture is smooth. Stir in vanilla and remove from heat. Pour cooked pudding into your chosen serving pieces. Place sheets of heavy-duty plastic wrap directly on top of the warm mixture. This will prevent an unwanted film to develop across the top of pudding. Allow to chill for about 2 hours or until pudding is completely cool. Sprinkle crushed cookies and/or whipped topping and sprigs of mint prior to serving.

When you said you were looking for a dessert for really hot days, I really wasn’t expecting coffee! But serving an espresso-flavored chocolate pudding with an almond-infused cream, little cookie crumbs and amaretto cookies makes a complete dessert. You could still serve coffee or sweet tea with it. Girl, you hit the nail on the head with this giveaway! We have two Nespresso machines at the moment–one at home and one at our little place in the mountains. My husband used to have one in his office, too! We fell in love with Nespresso on a trip to Switzerland several years ago, and we’ve never looked book. The pods aren’t cheap, but they’re available for reasonable prices at Nespresso.com–and for the quality espresso you get, the price is VERY reasonable! I honestly think the crema produced by this little machine is better than what we used to get with our very pricy Breville espresso maker.
