I make NO apologies for my blueberry obsession.
Seriously, y’all. I love those little blue berries. Our blueberry season has ended and we are into strawberry picking season (my second fave berry). During blueberry picking season I made certain I had bags and bags to freeze. I think I am to blueberries as Bubba Gump was to shrimp. Blueberry Buckle, Blueberry Muffins, Blueberry Bread…I could go on and on. And if you have been following me for any time here at The Everyday Home, you have probably noticed when it comes to blueberries – I eat a lot of them and cook a lot with them too. Here is another of my fave Blueberry Recipes.

I’ve just discovered a new product and I have to say it sent me into Blueberry Heaven! It’s called “Just Blueberry” by The R.W. Knudsen Family® lines of fruit juices.
Seriously, y’all! Love at first sip! I knew right away this would become a product in my home. Can you imagine all the great baking you can do. Don’t even get me started on some serious cocktails.
I decided to use it to make one of our fave Breakfast Recipes. And when I say “recipe” I use that term lightly, as there really isn’t degree of difficulty here. If you can stir, you can make this. I love to make this in small batches and store it in serving size jars. It’s great for a grab-n-go breakfast or after-school snack.
I started with a large container of Greek Yogurt. I used Vanilla flavor but you can use plain. I added fresh blueberries (you can use as many as you want) and also the juice of a half of a lemon.
Next, I added about a 1/4 cup of R.W. Knudsen® Family Just Blueberry juice and gave it all a good stir. Yes, that’s it. But it produced the most amazing Blueberry Lemon Yogurt I have ever had.
A large carton of yogurt made about 8 pint sized jars of ready-to-eat yogurt. My hubby loves to top his with homemade granola, and I love mine topped with toasted walnuts. The babies love Cheerios. LOL No lie, Cheerios. But that’s okay because I know they are eating a healthy and nutritious snack.
I make an AH-mazing Grilled Plum Arugula Salad with a Blueberry-Basil Dressing and I can’t wait to try this juice in that recipe.
No matter how you decide to use The R.W. Knudsen Family® Just Blueberry Juice, you will find that it adds an instant burst of simplified Spring flavor to any dish.
Tell me how YOU would eat your Blueberry Lemon Yogurt. What would you top yours with? Tell me below in the comments, I love to hear from you!
