Salmon.
I could eat it several times a week and still ask for more. It’s just one of my favorite seafoods and favorite dinners, too. The Hubbs, not so much. He likes salmon but would rather have a nice juicy steak. (Typical man, huh?) But, when I roast it with potatoes and the fish is moist and full of herb-a-liscious flavor, he even agrees it’s mighty good. I rarely cook salmon any other way. I used to pan sear it and to be honest, it was hit and miss. This no-fail way is now my go-to recipe for not only salmon but almost every kind of fish. I think you will like it too!

If I had to guess, there are a bazillion salmon recipes on Pinterest. I think the way you cook your salmon depends on how you prefer your fish. I tend to like a pink center, but hubby wants zero pink. I have found I can better regulate the center’s temperature in the oven versus in a pan. Come Summer, we will be preparing a lot of salmon on the grill. I have to say, I love this one pan version. The marinade features a touch of brown sugar which allows for a nice, brown glazed affect. It’s easy clean up, quick and you can add more than potatoes if you like.
I have prepared this same recipe and used sweet potatoes, added asparagus and cherry tomatoes and even an assortment of squash and zucchini. The secret is in the preparation of the fish. I have to tell you, I got so hungry typing up this post and took a break and went to the market to get some fresh salmon filets. Guess what’s for dinner babe? 😀
Here is my easy no fail One Pan Roasted Salmon with Potatoes:
- 2 tablespoons light brown sugar, packed
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 2 cloves garlic, finely minced
- 1/2 teaspoon dried dill
- 1/2 teaspoon dried oregano
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried rosemary
- Salt and Pepper to taste
- (4) 6 oz salmon fillets, skin off
- 2 tablespoons chopped fresh thyme (opt)
- About a dozen small (approx 2") new potatoes
- Olive Oil
- Course Sea Salt
- Pepper
- Combine all the ingredients of the marinade in a small bowl and set aside.
- Preheat oven to 400 degrees F. Prepare a baking sheet with a light coating of oil, or spray with an olive oil spray.
- Add salmon filets in a single layer and brush each salmon filet with the oil/herb mixture. Place potatoes in ziplock bag. Add enough olive oil to generously cover potatoes. Sprinkle with coarse sea salt and pepper. Toss inside baggie to coat well. Place potatoes all around salmon filets.
- Place fish and potatoes on the middle rack and cook until the fish flakes easily with a fork, about 16-18 minutes.*
- Serve immediately, garnished with fresh chopped herbs, if desired.
- You can also add assorted sliced vegetables such as squash and zucchini, or add spears of asparagus. You can reserve some of the fish marinade to drizzle on the vegetables prior to cooking.

Another fast way and variety is to spoon prepared pesto onto each fillet! Add your favorite pasta and Viola!
