I know, I know. I’m on an herb kick here lately, huh?
I can’t help it. It’s one of my weaknesses when I’m at the garden store.
Next week, I need to harvest my basil and mint.
If you know anything about the mint family, you know that I have it
coming out of my ears right now.
Many years ago in the late 90’s, looooong before blogging was even
heard of, I wrote a website called The Everyday Decorator.
Some of you may remember it. (Oh yes, it’s still out there in
internet-land, where my home was filled with Cabbage Roses and
lots if design styles that now make me say to myself…
“What was I thinking?”
I wrote an article about what I did with an abundance of
harvest of herbs. I still do that to this day.
Basically, I chop them up and freeze them in ice cube trays.
I add one teaspoon of chopped herbs in each ice-cube
opening. Once frozen, I pop them out and place the
herb cubes in ziplock bags marked with the type of herb.
You can fill your trays with either water or oil. When you need some
“fresh herbs,” just grab a cube from your ziplock baggy and throw it in
your pot.
I love to create mixtures of herbs such as “Provencal” using Rosemary,
Tarragon and Thyme, for example. Great in seafood dishes, btw. Yum!
I also have a mixture of Cilantro, Parsley and Mexican Oregano for my
Southwestern dishes.
There is nothing like having fresh herbs and a taste of Summer when the
weather outside is frightening.

herb garden. Don’t you love the ceramic plates and
spoons that have been added?
This is a project I hope to be trying out soon.
Stamped spoons. I adore the stamped butter spreader, too.
These herb markers are absolutely charming.
I love this creative way to dry herbs using paper sacks.

Love this idea! I first saw it on Pinterest and “liked” it so that I could review it later. Well it’s later and I will be buying some ice cube trays today! Our herb plants are ready for a good harvesting. Normally I just dry them and store them in glass jars. But these look so delectable! I see tons of baggies heading into the deep freezer this week! Thanks for the post!

I am also crazy about herbs. I dry mine in the microwave (did a post a few days ago). I also freeze them, but I just freeze them alone, not in cubes. As for the spoon markers – they are so easy to make, try it! They are adorable in the garden! This year I potted my herbs in large painted tin cans, they are so cute! I am not much of a gardener, but herbs need little care and that is what I like about them!
