So what does my husband’s gift and Tablescape Tuesday have in common? More than you know! LOL Until tomorrow, here is a little peak into my night’s activities. I want to share with you one of the staples in my kitchen.
It’s this pre-made Butternut Squash soup. Now, you might be saying to yourself “what’s so special about a soup?” Well, my little blogglettes, this is no ordinary soup. Oh no! It’s ambrosia in a carton. The best thing about its packaging is you can use as little as you need, and easily reseal it back. But, its not just a soup – this makes a great thickener in other recipes such as homemade stews. It adds a subtle sweetness to any dish. I especially love it in my Curried Seafood Stew. My husband loves my “Squash ‘Taters.” Sometimes when I make mashed potatoes, I add some of this soup along with the cream and butter. Remember when I said there were lots of ways to “dress up” instant potatoes, well – this is one of them. I have also used this soup in muffin mixes, and its wonderful. But tonight, I want to share this easy “Special Night for Grammy” soup which I made for my dinner tonight.
The above ingredients are all that’s needed. You can substitute white wine for the cooking sherry. I used about 1/2 of the container, and added about 2 Tbs. sherry, about 2 Tbs. cream, about 1/2 tsp crushed rosemary, just a pinch of garlic, and some salt and white pepper to taste. Then I let it simmer for a bit to infuse all the flavors.
So here is the soup before I dove into it. It was just what I needed for the first Monday back at work after the Holidays! You also can see just a glimpse into my tablescape I will share tomorrow.

That sounds soooo yummy! I use the Tomato basil soup when I make my vegetable soups. It add just enough “umph” to the soup to make it different and delicious!

Barb I wish I had you around to cook for me.Are these recipes that you got from MOM or are you one of those naturally good at everything kind of girls?never mind I know the answer, the proof is in the puddin’ as they say and honey your puddin is wonderful. I made the Shepherds pie for dinner and thouroughly enjoyed it.It was so fast and easy and a very hardy meal on a cold rainy night.I love your blog and always look forward to your postings. How can you make something so ordinairy seem so gourmet Miss Barbara? It sounds heavenly and I just want to run right out and buy every variety they offer of this soup! I think I just found the perfect dinner for this cold rainy day. Can’t wait to hear what Bill got you!
